These roasts are a very lean cut of meat - tasty and delicious. They can look like a tenderloin, but are not and need a different treatment to bring out its best qualities. We like to dry-brine then slow-roast it, following the Cook's Illustrated cooking method. This is one of our family's favorite roasts!
