Specialty Bacon

Try our new Specialty Bacon!  Made by the same crew that makes our Specialty Sausage, this new (limited edition!) Naked Bacon is made with our pork, maple syrup, brown sugar, salt and spices.  Only ten one-pound packs for this trial run.  Let us know what you think!

Specialty Sausage

This artisinal sausage is made with our pork and the freshest ingredients by a sausage maker in DC.  All packs are $9.00 each.

Kielbasa This fresh version of the traditional Polish sausage contains our pork along with fresh garlic, marjoram, black pepper, coriander seed, ground mustard seeds, and sea salt. Each package contains two 6-ounce links.

Chorizo Picante  A moderately spicy fresh chorizo in the style of the Catalan region of Spain.  Flavorings include sea salt, sherry, paprika, cayenne, white pepper, sugar, oregano and cloves.  Each package contains three 4-ounce links.

Our Halfsmoke Recipe  An all-pork version of the DC-original sausage, this is our family's favorite.  We like to grill them up and eat them as a replacement for hotdogs.  Contains pork, mustard, garlic, paprika, white pepper, sugar, coriander, cloves, allspice, bay leaf and (just a touch) of sodium nitrite.  Each package contains four 3.5 ounce links.

Bacon Ends

Leftover bits and pieces of bacon.  Perfect for flavoring baked beans.  Size varies, generally from 1/2 pound to 1 pound.  Price is $5.00 per pound.

Smoked Pork Jowl

Similar in flavor to bacon, this jowl meat is cured and smoked, then cut into thick slices.  Price is $10.00 per pound.

Ground Pork

In one pound packages.  Price is $7.00 per pound.

Pork Chops

Packaged two per pack.  Available in thin cut (1/2") or thick cut (1") as well as boneless or bone-in.  Bone-in pork chop packages are about 1 1/2 pounds for thick cut and 1 1/4 pounds for thin, and are $8.00 per pound.  Boneless pork chop packages are about 1 pound for thick cut and 3/4 pound for thin cut, and are $9.00 per pound.

Smoked Ham Roast

**Update, 3/22/18:  More Easter hams are on their way.  Despite being slowed down by the snow, our processor has managed to get the hams out of the smoker and into our freezers right on schedule.  We will be picking them up on Friday, March 23rd.  We don't know the sizes yet, so we have opened ordering in all of the size ranges.  If you select the size you'd like, we will do our best to match you with your perfect ham.**

We only carry these hams around the holidays, and they sell out quickly!  Smoked and cured, they range in size from six to fifteen pounds.  Bone-in.  Makes a great family meal.  Figure about 1/3 to 1/2 pound per person, or a little more for leftovers.  Price is $6 per pound.

Ham Steaks

These smoked slices of ham are very popular in our household.  Defrosts and cooks quickly for a delicious last-minute meal!  Can be pan-fried, grilled or baked.  Smaller ham steaks are about 1 pound; larger ham steaks are about 1 1/2 lbs.  Price is $8.00 per pound.

Boneless Pork Loin Roast

One of the most tender and desirable cuts.  Perfect for roasting in the oven.  Roasts average about three to four pounds.  Price is $9.00 per pound.

Shoulder Roast

Best for low, slow cooking.  It's the roast you want for pulled pork.  Price is $7.00 per pound.

Smoked Shoulder Roast

A shoulder roast, but with the smoking already done for you!  Cured and smoked, it tastes like a ham.  Great just roasted in the oven, but also does well in a slow cooker.  Price is $8.00 per pound.

Whole or Half Pigs

**UPDATE March 22nd, 2018:  We have half or whole pigs available for sale.  Reserve now, as our quantity is limited!**

Fill your freezer with lots of heritage, pasture-raised, medication-free pork, cut and smoked to your own specifications!  More (important!) information about purchasing a half or whole pig can be found here

If you are ready to reserve your pig, you can do so here.  If you would like a half pig, order a quantity of "one" on your desired reservation date.  If you would like a whole pig, order a quantity of "two" on your desired reservation date.  We require a $100 deposit for a half pig and a $200 for a whole pig.  This deposit will be applied to your final balance.

Once we receive your reservation and deposit, we will contact you to get your cut specifications.  After your pig has been processed and we know the exact weight, we will send you an invoice for the remaining balance due.  Please note that most of the pork will be ready on the Friday of the week your pig is processed, but cured and smoked meats will be ready in one month.

Pigs Feet

Actually, they are really good!  Each package contains two feet and weighs about five pounds.  Price is $2.00 per pound.
